Additive - Any chemical or compound added to the must, other than the basic recipe ingredients. They are essential for peace of mind for, if lacking, there is the possibility that the fermentation will stick. Basically, additives are necessary foodstuffs for yeast growth or yeast enzyme activity which will ensure a healthy ferment with minimum amounts of fusel oils being produced.
