Ketone Chemical compounds present only in trace amounts as a by-product of fermentation. They do, however, play an important part in the bouquet of the wine.

Kieselsol


Kieselsol is a silica gel (Sioz) and gelatin solution. Used in conjunction with chitin it is an extremely tarifier.  See Chitin.
