Sherry:  Primarily made in Andalucia province in southern Spain from fermented white wine. The wine is fermented fully dry and allowed to oxidize; in some styles the wine is induced to grow a layer of mold called flor over the surface of the wine. Sherries are bottled between 15-20% alcohol, depending on the type (the oloroso styles are generally around 20%). The four basic styles, named after the degree of sweetness, are: 1) fino muy seco (very pale dry), 2) fino or manzanilla (pale dry), 3) seco oloroso (medium-dry), 4) oloroso cream (medium) and 5) bristol cream (sweet).
